The paper examines the account book of the cook, Jalaguer, between May 1 and October 3, 1766, working for a languedocian gentleman, the Marquis of London, François Henry Jean Antoine de Roquefeuil, whose many possessions were situated in the scrubland of Montpellier. These stories have two main interests. These accounts show the daily food items bought in the market and in the shops of Montpellier as well as the amount of money a rich gentleman spends for his meals. The second is more unusual because the stories fall within the last five months in the life of the young gentleman, who dies at the age of 32. Thus, besides the daily presentation of the gentleman’s social status, they also show adjustments in the cooking to suit his gradually deteriorating health condition.
